Breaking Eggs

What to do with all those leftover eggs that did not get boiled and colored for Easter? Or is your situation one of 'wow, great sale on eggs' I'll get another dozen? If either of these situations describes you; or if you just like to bake a really good and simple cake (makes a great foundation for a strawberry shortcake). Here is a pound cake recipe that I rely on. 

One and a 1/3 cup of sugar

4 eggs

2sticks unsalted butter

1/8t.salt

13/4Cup of flour

1/3 C. half and half'

1/4 t. mace

1/2t. vanilla

300 degree oven 9x5 loaf pan for 45 min to an hour

Cream the butter and sugar add the egg yolks and whip the whites separately to fold in later, or do as I do, and just put the whole egg in there and beat it up…add dry ingredients alternating with the half and half. pour into the pans, bake about an hour. This cake is dense and flavorful. I sometimes add orange or lemon zest as a substitute for the vanilla, I prefer a citrus back story. Good luck and happy eating.
